The Khuwa-Making Machine is an innovative solution developed by Nepal's National
Innovation Center to revolutionize the process of producing Khuwa, a common dairy product
in South Asian cuisine. Traditionally made through labor-intensive methods involving wood-
Fired stoves and constant stirring, Khuwa production faced challenges such as high costs, low
efficiency, resource scarcity, and environmental impact. This machine automates the process,
featuring an efficient LPG-based heating mechanism, continuous stirring for uniform
thickening, and precise temperature controls to prevent burning. Made from durable, food-
Grade materials, the machine processes up to 120 liters of milk per batch and incorporates a
semi-rotational stirring system for enhanced consistency. Addressing the issues of traditional
production, the machine reduces operational costs, improves productivity, and ensures eco-
friendliness. Conceptualized and led by senior engineer Dajangbu Sherpa, this innovation has
already transformed Khuwa production for many, supporting local businesses and preserving
cultural culinary practices.
The journey of the Khuwa-Making Machine began with a significant challenge faced by
traditional Khuwa producers in Nepal. The process, involving boiling milk in large iron
vessels over wood-fired stoves, was costly, inefficient, and harmful to the environment. This
inspired locals, especially from Tokha, to seek a solution.
Senior engineer Dajangbu Sherpa of Nepal's National Innovation Center took on the task and
designed the machine after months of research, prototyping, and testing with different milk
densities and motor powers. The result was a machine that automated the process, ensuring
uniform heating and stirring, while significantly reducing costs and environmental impact.
This innovative machine has already benefited hundreds, with 12 units sold in just six
months. It demonstrates how technology can help preserve traditional cooking methods while
solving modern-day challenges.
The general objective of the Khuwa-making machine is to modernize and streamline the
traditional process of khuwa production. This involves automating the labor-intensive and
time-consuming methods traditionally used, enhancing efficiency, consistency, and safety
while reducing operational costs and environmental impact.
